A quick and easy air fryer recipe for crispy parmesan-crusted walleye fillets, ready in under 10 minutes with a flaky, tender inside and a crunchy outside coating.

Ingredients

Scale
  • 1 lb walleye fillets (about 2 fillets, skinless if possible)
  • 1/4 cup panko breadcrumbs
  • 1/4 cup finely grated parmesan cheese
  • 1 egg
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 lemon (for fresh juice after cooking)

Instructions

  1. Thaw walleye fillets if frozen.
  2. Remove skin from fillets if present.
  3. Cut each fillet in half.
  4. Pat fillets dry on both sides with paper towels.
  5. Crack and whisk the egg in a shallow bowl to make an egg wash.
  6. Combine panko, grated parmesan, garlic powder, onion powder, paprika, salt, and pepper in a second shallow bowl.
  7. Dip a fillet in the egg wash to coat fully.
  8. Press the fillet into the parmesan-panko mixture, covering all sides.
  9. Place coated fillets in the air fryer basket, leaving about 1 inch of space between pieces and cooking in batches if needed.
  10. Air fry at 400°F for 6 minutes.
  11. Check that the fish is flaky and has reached an internal temperature of 145°F.
  12. Squeeze fresh lemon juice over the cooked fillets.

Notes

For extra crispness, ensure the fish is thoroughly dried before breading to help the coating stick better and crisp up., Do not crowd the air fryer basket to allow even hot air circulation; leave about 1 inch between pieces., If you use frozen walleye, thaw completely and pat dry before coating to avoid sogginess from steam., Use a sharp, non-serrated knife to easily remove the slippery skin from the fillets., If desired, breading can be skipped for a lighter fish; pat dry and season with spices before cooking., Leftover fillets can be stored in an airtight container in the fridge for up to 3 days or frozen with proper wrapping to prevent freezer burn., Reheat leftovers in the air fryer for 2 minutes or in a 350°F oven for 5 minutes, thawing first if frozen., This recipe works well with other mild white fishes such as cod, halibut, or mahi mahi., Perfect served with sides like honey sriracha Brussels sprout salad, crispy roasted potatoes, tzatziki sauce, or dill pickle dressing.
